Chili Chicken and Peaches Appetizers

Now that sunny days and warmer temps are here, many healthy and delicious fruits are coming back in season! One of my favourite warm-weather fruits to eat and cook with is peaches.

June is the beginning of peach season, but depending on where you live, you may be able to get your hands on some newly ripe ones. In Florida, peaches begin to get harvested in the late spring in April and May. Lucky Floridians!

Peaches are perfect in desserts like cobbler and pies, but there’s so much more you can do with them. Today I’m sharing my recipe for Chili Chicken and Peaches Appetizers. They come together in minutes and are the ideal starter for any party – and the perfect excuse to throw one!

Delicious and Healthy

But first, let’s talk about just a few of the reasons why these delicious stone fruits are so good for you!

Peaches are rich in many nutrients that provide a wide range of health benefits. For one, because they’re rich in Vitamins A and C, peaches improve vision and skin health, and they boost immunity. Plus, they can help prevent bone loss and kidney stones and maintain healthy blood pressure.

Recipe Tips

To save time, pick up a rotisserie chicken at the supermarket. The recipe serves three, so if you’re taking this to a party, you may want to make two or three batches.

They’ll keep well in an air-tight container in the fridge for a day, but they’re best eaten freshly made. Although highly unlikely, if you end up with leftovers, you can add the chicken mixture to fresh greens to make an easy salad for lunch the next day.

If you’re a fan of lettuce wraps, the mix makes for a yummy filling.

For a heartier dinner option, add the chicken mixture to a plate of couscous or quinoa and drizzle with more chili sauce.

Chili Chicken and Peaches Appetizers

  • 4 peaches (medium, ripe)
  • 1/2 cup chicken (cooked, shredded)
  • 2 tsp Thai garlic-chili sauce
  1. Slice peaches into quarters and remove pits. Scoop out the fruit, leaving a small layer in the shells. Chop the scooped fruit into ¼-inch pieces.

  2. Mix the ingredients in a large bowl. Spoon a heaping teaspoon into each shell.

  3. Place on a serving dish. Optionally, provide additional chili sauce for dipping.
