Mango Coconut Summer Salad

  • 4 cup Lettuce, spring mix
  • 2 Mangoes (cut into 1-inch pieces)
  • 1 small Cucumber
  • 1/4 cup Olive Oil (Extra Virgin)
  • 1 Lime (Juiced)
  • 1 tbsp Apple Cider Vinegar
  • 2 Avocados (Cut into large chunks)
  • 1 dash Sea Salt (Fine)
  • 1/2 cup Coconut Chips (Thick)
  1. Place all the salad ingredients in a large bowl, except the coconut chips and avocados.

  2. Place all the ingredients for the dressing in a small bowl and whisk.

  3. Add the salad and toss to combine.

  4. Garnish with coconut chips and chunks of avocado.

NOTES:

* Avocados are a great source of monounsaturated fatty acids, which are SO important for heart health.
* Serve this recipe on the side with chicken breast or pork chops!
