Sweet Potato Ginger Soup

This hearty winter soup will not only warm you up after that snowball fight, but will fill you up (sweet potatoes are a great source of healthy fats), give you energy, AND help to boost your metabolism!

Ginger is also a powerful anti-inflammatory, which is important in winter for anyone with serious illnesses such as diabetes, heart diseases, asthma, arthritis (like me!), etc., as cold weather can cause flare-ups.

On top of all that goodness, it’s also SUPER EASY to make and doesn’t require many ingredients, so it’s perfect to fit into your weekly meal prep schedule!

 

Sweet Potato Ginger Soup

  • 2 cups sweet potato (peeled and cubed)
  • 1 1/2 cup carrots (chopped)
  • 1 tbsp ginger root (minced)
  • 3 cups water (filtered)
  • 1 1/4 tbsp coconut oil
  • 1/2 tsp sea salt
  1. Melt coconut oil in a pot over medium heat.

  2. Add vegetables and ginger, cooking for about 2 minutes.

  3. Add water, cover, and simmer for 30 minutes or until vegetables are tender.

  4. Add salt.

  5. Using a blender, food processor, or hand blender, puree until smooth (or your desired texture).
