Mango Coconut Summer Salad
- 4 cup Lettuce, spring mix
- 2 Mangoes (cut into 1-inch pieces)
- 1 small Cucumber
- 1/4 cup Olive Oil (Extra Virgin)
- 1 Lime (Juiced)
- 1 tbsp Apple Cider Vinegar
- 2 Avocados (Cut into large chunks)
- 1 dash Sea Salt (Fine)
- 1/2 cup Coconut Chips (Thick)

Place all the salad ingredients in a large bowl, except the coconut chips and avocados.

Place all the ingredients for the dressing in a small bowl and whisk.

Add the salad and toss to combine.

Garnish with coconut chips and chunks of avocado.
NOTES:
* Avocados are a great source of monounsaturated fatty acids, which are SO important for heart health.
* Serve this recipe on the side with chicken breast or pork chops!
