Happy Mardi Gras! We all know & love “Pancake Day” (aka Shrove Tuesday, aka Mardi Gras, which is French for “Fat Tuesday”) but do you know WHY we eat pancakes today? It’s actually a Christian tradition, to use up the food that won’t be eaten during Lent, a time of fasting, which starts tomorrow & runs until Easter.
That being said, it’s not exactly the healthiest thing to eat everything in your cupboard in one night 😉 So here’s a super-healthy 3-ingredient version you can use for tonight’s dinner!
Dark Chocolate Chips (optional)
1. Using a blender or mixer, combine the banana & eggs.
2. Pour the mixture into small portions on a heated pan.
NOTE: Keep the pancakes thin, because these are harder to flip than “traditional batter” pancakes.
3. Once both sides are cooked through & lightly brown…eat!
